The KAI Shun Premier Tim Mälzer Bread Knife (23 cm, TDM1705) is designed for slicing various types of bread. It features a 230 mm blade with a hard VG-MAX steel core, surrounded by 32 layers of Damascus steel, which provide a distinctive finish and durability. The serrated edge is designed to grip firm crusts while keeping the soft interior of the loaf intact. Its geometry ensures the knife handles both artisan loaves and standard baked goods effectively.
The handle is made of dark brown laminated PakkaWood, which provides a stable grip. Developed in collaboration with designer Tim Mälzer, the knife focuses on functional balance and traditional Japanese craftsmanship. Manufactured in Japan, the blade is finished to highlight its layered steel structure. Hand washing is required, as the knife is not dishwasher-safe; high-heat cleaning cycles can damage both the edge and the wood handle.
